We are using a seasonally available yeast for this one, the Thames Valley II. In this context, "ESB" stands for "Extra Strong Bitter," not Empire Strikes Back.
We waited until it cooled off outside to start because it's been quite muggy today, tomorrow will be worse. The kitchen is very, very hot right now. In the meantime, The Girl is at training for her new job.
