Chowder recipe

 Who likes chowder?  Sure, we all do!  Here is some non-dairy chowder, modified from an online recipe. 

Ingredients:  
1 pound of fish or shrimp
1 medium onion, chopped
2 teaspoons canola oil
1 teaspoon crushed red pepper
2 cups vegetable broth
1 can corn, drained, or frozen corn equivalent
1/4 teaspoon salt
1/4 teaspoon pepper
2 cans (13.66 ounces) coconut milk
Optional:  Lime juice, Avocado, cilantro 

Directions:  
Boil some fish or shrimp separate during soup making.  Keep hot.  

In a large saucepan, saute onion in oil until tender. Add red pepper flakes. Stir in the broth, corn, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Remove from the heat and stir in coconut milk. Cool slightly.

With a blender or food processor, liquefy soup in batches until blended. Return all to pan.

Add cooked fish or shrimp; cook and stir over medium heat for 5-6 minutes. Garnish with optional ingredients if desired.

This was good with catfish; it was really good with Trout.

That sounds really good. I usually use soy or almond milk in my chowder, but I like the idea of the coconut milk with crushed red pepper and lime juice.

It's always very satisfying to be just trying to make do and find out that you've invented something really good.

I'd be tempted to put in a diced red bell pepper. But I think all such experimentation will have to wait until it's not so miserably hot out. Soup doesn't quite seem the thing right now.

P.
