Chowder recipe
Jun. 14th, 2020 01:24 pm Who likes chowder? Sure, we all do! Here is some non-dairy chowder, modified from an online recipe.
Ingredients:

1 pound of fish or shrimp
1 medium onion, chopped
2 teaspoons canola oil
1 teaspoon crushed red pepper
2 cups vegetable broth
1 can corn, drained, or frozen corn equivalent
1/4 teaspoon salt
1/4 teaspoon pepper
2 cans (13.66 ounces) coconut milk
Optional: Lime juice, Avocado, cilantro
Directions:
Boil some fish or shrimp separate during soup making. Keep hot.
In a large saucepan, saute onion in oil until tender. Add red pepper flakes. Stir in the broth, corn, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Remove from the heat and stir in coconut milk. Cool slightly.
With a blender or food processor, liquefy soup in batches until blended. Return all to pan.
